What is Brick-Fired Pizza?

Brick-fired pizza refers to the use of a wood-fired oven to cook pizzas at an extremely high temperature. Unlike traditional pizza ovens, wood-fire ovens with a stone-baking platform operate at temperatures between 700 and 900 degrees, allowing for pizzas to be cooked quickly as the Italians intended them to be cooked. Our sauce is a company secret, and with the right blend of local and imported tomatoes, spices and herbs, our sauce is truly perfect. Our pizzas are not just tossed in the oven. Instead, we take the time to hand-create our pizzas for our clients. We believe in taking the time to hand-stretch our dough, sauce our pies and build them out from scratch. No matter if we are making a custom pizza, something off the menu or a weekly deal, your pizza will be hand-crafted in-house. We have a dedicated chef on pizza duty who runs our wood-fire oven and will ensure that your pizza is picture-perfect and, most importantly, fully cooked before hitting your table. Now, we should warn you, our ovens do run at over 700 degrees, so your pizza is going to be hot!

  • What is the difference between brick-fired and traditional pizza oven pie?

    The traditional brick-fired oven is the superior way to create pizzas, even if you are looking for a personal pan pizza. The reason for this is simple, wood-fire ovens give a taste that cannot be emulated and provide you with a better overall crunch in the pizza and crust as your pizza is being cooked from all sides. In comparison, traditional pizza ovens have an element at the top that cooks the pizza as it moves over a conveyor. These ovens often leave a chewy texture and are best suited for large chains like Pizza Hut, which can pump pizzas through quickly, rather than for the pub-style pizzas we deliver at the Log Cabin Tavern.  

  • Where is your brick oven made?

    Our brick oven is made here in the United States and takes its original design from Italy.  

  • What temperature is the brick oven set at?

    Brick ovens cannot be set like your oven at home, but we normally aim for between 700 and 900 degrees, depending on how many pizzas we are cooking and what we are cooking. As our brick oven is a wood-fire oven, we control the temperature by adding logs to the oven or removing coals if we need to cool things down. Our pizzas only take a few minutes to fully cook, unlike the up to 10- 15 minutes it takes for a typical pizza oven.
